THE TL;DR VERSION
Market At A Glance:
🔺Tight & elevated: Tomatoes and limes remain extremely tight. Corn, peppers, eggplant, bok choy, grapes, celery, romaine, fennel, and honeydew continue to be limited due to weather impacts and seasonal transitions.
🔻Easing: Green beans, cucumbers, zucchini, tomatillos, mushrooms, spinach, spring mix, mango, ginger, jicama, and mini sweet peppers are improving as new crop supply comes online.
➡️ Transitioning: Lettuce and brassicas have shifted from Yuma to Salinas, creating short-term variability. Onions are moving from storage to new crop, tightening whites slightly. Raspberries and blueberries remain tight as new regions ramp up.
📈 What’s Up?: Price increases this week on iceberg lettuce, green leaf, romaine hearts, Chinese eggplant, hot house tomatoes, Brussels sprouts, green onion, celery, and green seedless grapes as early transition challenges and reduced greenhouse and field supply continue to tighten availability.
📉 What's Down?: Price decreases this week on bell peppers, runner beans, limes, baby eggplant, and corn as improved supply from Florida and Ontario, shifting growing regions, and easing input costs help relieve market pressure.
🍅 Tomato Market Update: The tomato market remains very elevated this week, however supply is beginning to improve and conditions are trending in a positive direction. We are hoping to see some improvement next week.

We've got some exciting new arrivals this week on the produce front including:
Hami Melon | 2747 — Think somewhere between a cantaloupe and honeydew with a bit more bite. Crisp, juicy, and super refreshing. Works well in fruit plates, salads, or paired with prosciutto, seafood, or fresh herbs for something light heading into warmer weather.
Purple Asparagus | 2098 — A nice switch-up from your standard green. Slightly sweeter, a bit more tender, and holds its colour best when served raw or lightly cooked. Great for spring menus, shaved into salads, or quick blanched and finished on the grill.
Purple Yams | 12132 — Vibrant colour that really stands out on the plate. Slightly denser and starchier than sweet potatoes with a mild sweetness. Roasts well, fries well, and adds a strong visual element to sides, purées, or chips.
Just listed from Egg Solutions, made from farm fresh eggs, these liquid whole eggs are pasteurized and homogenized for consistent performance and reliable food safety.
Ready to use with an easy-pour spout, they help reduce prep time, eliminate shell waste, and keep things moving during busy service.
