Welcome to this week's edition of the Market Report, your go-to for all the highs and lows of the week.
December’s here and the holiday countdown is officially on. Whether you’re deep in menu prep or just trying to stay ahead of the rush, now’s the time to stock up, plan smart, and get your mise in order. A little extra prep now means way less headache later...your future self will appreciate it.
Here’s what’s worth keeping an eye on this week...
THE TL;DR VERSION
Market At A Glance:
🔺Tight & elevated: Leafy greens, Brussels sprouts, celery, broccolini/broccoli, snow & snap peas, herbs, green onions, mixed chilies, grapes, and berries remain highly elevated due to rain-driven low yields and holiday demand.
🔻Easing: Cauliflower and green beans are improving and cantaloupe/honeydew imports are strengthening with better volume.
➡️ Transitioning: Strawberries are shifting into CMEX/Baja/Florida; tomatoes are moving into new fields; melons are entering import season; Yuma veg is still delayed from rain.
✅ Peaking: Citrus is excellent across navels, lemons, grapefruit, mandarins, and early Cara Caras/blood oranges. Avocados and Mexican blueberries remain strong.
📈 What’s Up?: Prices are up this week across Perigord truffles (transition to true winter season), raspberries , Thai green chilies, Brussels sprouts, and baby eggplant , driven by seasonal transitions, increased demand, imported supply, and higher airfreight costs.
📉 What's Down?: Prices are down this week on green beans, strawberries, cauliflower, Gailan, iceberg/romaine/romaine hearts, pea leaf, Roma tomatoes, yellow & fancy zucchini, and rapini, driven by improving volume, stronger Mexican and U.S. supply, and the start of key seasonal harvests.
🍈 New Arrivals: Buddha's Hand! Black Grapes! Pomelos! Ya Pear! Grana Padano! Grated Parm! Jimmy Nardellos!
🟥 Red Flags: Haven Greens is expecting reduced availability for their foodservice spring mix throughout December. Full details and a few shorts from last week of note below.

Market Recap
What's Up, What's Down
📈Price Increases📈
These items have surged in price this week:
PERIGORD TRUFFLES (12017) -We were receiving a steep transitional discount as we moved from fall Burgundy truffles to true Perigord winter truffle. We have reached the end of our transition period. Pricing will now reflect the higher landed cost that comes with limited availability and peak quality.
RASPBERRIES (3227) - Increase is driven by strong market demand and the seasonal shift from Florida to imported growing regions.
THAI GREEN CHILI (3024) - Rising airfreight costs this season are driving prices up.
BRUSSELS SPROUTS (2225) - We’re bringing product in by air from Europe and supplementing with Quebec supply, and rising holiday demand is pushing prices up.
BABY EGGPLANT (2477) - Start of the season for imported Spanish eggplant.
📉Price Drops📉
These items have dropped in price this week:
GREEN BEANS (2153) - We’ve begun pulling product from Mexico, bringing prices down, with further decreases expected as direct imports ramp up.
STRAWBERRIES (3346) - The market is stabilizing, and increased volume is bringing prices down.
CAULIFLOWER(2301) - The market is stabilizing as volume improves.
GAILAN (2515) - Better availability from both Mexican and U.S. product.
ICEBERG LETTUCE, ROMAINE LETTUCE & ROMAINE HEARTS (2647, 2655, 9072, 2687, 2689 & 2696) - The market is stabilizing as volume improves.
PEA LEAF (2627) - Mexican season has started, boosting availability and easing prices.
ROMA TOMATOES (3431) - Mexico’s Jalisco season has begun, increasing supply and driving Roma prices down across the board.
YELLOW & FANCY ZUCCHINI (3551 & 5490) - Mexican crops are now yielding normal yellow volumes and a short-term surplus of greens for this time of year.
RAPINI (3221) - The market is stabilizing as volume improves.
This Just In!
🍈New Arrivals🍈
Specialty Fruit!
You might’ve noticed a few items online marked as “premium.” That’s us bringing in the different varieties — think Honeyglow pineapples, premium mangos and watermelon. Like anything in produce, grades vary and pricing reflects this, but if there’s a noticeably better option, we want you to have access to it, if you want it!
We’re also doubling down on sourcing the fun, hard-to-find stuff. This week, we’ve added a few new specialty standouts to the lineup, including:
Buddha's Hand | 7981 — Bright, floral citrus with zero pulp and all zest. Chefs use it for infusing syrups, seasoning sugar, finishing desserts, and leveling up cocktails. The most aromatic citrus in the game.
Pomelos | 6956 — Sweet, mild, grapefruit-adjacent citrus with a thick rind and super clean flavour. Great for segmented salads, crudo, desserts, and anywhere you want citrus without the bitterness.
Ya Pears | 12047 — Crisp, juicy, lightly sweet Asian pears with a clean snap. Ideal for shaving into salads, pairing with cheese, or adding crunch to plates.
Black Grapes | 2543 — Super dark, firm, and that deep sweet-jammy flavour. They’ve got a clean snap, they hold up on a board or a plate, and they look way more premium than your standard red or green grape on the plate.
Back for another season, it's everyone's favourite Jimmy! Sweet peppers, perfect for roasting or grilling. Limited quantities — great for holiday menus and charcuterie boards.
Haven Greens Spring Mix will see reduced availability through December due to tighter-than-usual supply from the greenhouse and some variability in growth cycles. Our team can help with subs.
Last Week's Shorts:

Watercress Red | 4479 — Increasing demand last week resulted in some shorts. Back in stock.

New Local Grower!
🌸Ohme Farms Edible Flowers & Herbs 🌿
We're super stoked to be working with Ohme Farms to bring in some beautiful edible flowers and herbs, locally grown in the Niagara region.
Ohme is a small family-run farm doing some of the most thoughtful ecological, biodiverse, regenerative growing you'll find anywhere.
Fresh cranberries are that bright, tart pop every holiday menu needs — sauces, chutneys, vinaigrettes, cocktails, baking, whatever. They hold their shape, take on flavour, and make any plate look way more festive without even trying.
Dried cranberries are the sweet-tart, chewy ones you toss into basically everything — salads, grain bowls, stuffing, baking, cheese boards, catering spreads. Zero prep, tons of colour. And yep, Bondi’s got both, so you’re covered no matter how you’re using them this season.
